The video cites a study that was done, here is a link to the MS thesis that contains that study:

I don't think the results are nearly as promising as one might claim. Looking at the numbers they really didn't use that many ppl in the study, and there is little to no improvement using the font vs. arial.....

But it's something I though was interesting

A Japanese lettuce farm, takes up half a football field of space, and produces 10,000 heads of lettuce a day. Lighting is done through LEDs in a strictly controlled day/night cycle and very little water (1% of that required for normal farming). Given where it's located, I think we're looking at nuclear lettuce here.
